Vegan Chili

This is a very delicious vegan chili that can be cooked in an instant pot or crock pot.  You can add or substitute with different varieties of vegetables as you wish.

Saute
  1. Heat the oil in a saute pan or insta-pot. Saute the onion, bell pepper, garlic, and salt for 4 minutes stirring frequently. Turn heat off.
Other Ingredients
  1. If using an insta-pot: add dried bean then all the other ingredients on top. Set insta-pot to the Stew or Chili setting and press start. Once up to pressure this should indicate a 30 minute cook time. If not, do a manual cook time for 30 minutes. Once the cook time is complete let steam release naturally for 15 minutes. Afterwards press the steam button to release remaining pressure.
  2. If using a crock pot: add saute'd vegetables to crock pot, add all remaining vegetables and spices. Add boiling water on top. Cook on high for 3-4 hours or until the beans are tender. While cooking you may need to add more boiling water or very hot vegetable broth if the chili seems to dry.
